Protein Banana Bread Recipe

Ingredients
¼ cup sugar
¾ cups vanilla or chocolate protein powder
3 tablespoons butter, softened
4 mashed bananas
1/4 cup skim milk
1/4 cup plain non-fat yogurt
2 large egg whites (or equivalent egg substitute)
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
Cooking spray

Instructions
Preheat oven to 350°.

Combine sugar, protein powder, and butter in a bowl; beat at medium speed with electric mixer. Add banana, milk, yogurt, and egg whites; beat well, and set aside.

Combine flour, baking soda, and salt; stir well. Add dry ingredients to protein mixture, beating until blended.

Spoon batter into a 9 x 5-inch loaf pan coated with cooking spray; bake at 350º for 1 hour and 10 minutes, or until a wooden pick inserted in center comes out clean.

Yield: 20 generous slices

Tips
* Choose bananas that are very ripe – brown and speckled bananas lend more flavor, and are easily mashed.
* For an energy-packed breakfast, spread a tablespoon of peanut butter on top of warmed or toasted banana bread.
* Experiment with whole-wheat flour by using 1 cup whole-wheat and 1 cup white flour in the recipe.
